Sun-Dried Tomato Hummus
2 1-lb cans of chickpeas, rinsed and drained
2 Tbsp tahini
1/2 cup plain yogurt
1/4 cup freshly squeezed lemon juice
2 Tbsp Ellyndale Organics™ Extra Virgin Olive Oil*
1 tsp. cumin
2 garlic cloves, chopped
1/2 cup sun dried tomatoes (not oil packed), finely chopped
1/4 cup kalamata olives, sliced
2 Tbsp fresh cilantro or Italian flat parsley
3-4 Tbsp lemon juice
Sea salt to taste
  1. In food processor or blender, chickpeas, tahini, yogurt, lemon juice, olive oil, garlic, and cumin.
  2. Process until smooth but not runny.
  3. Stir in tomatoes, olives, and cilantro.
  4. Stir in salt to taste.
  5. Refrigerate.
  6. Serve with veggies and pita crisps.
